Brendan has spent the majority of his working life within the food processing, retailing and catering sectors including the healthcare catering sector. This has included ongoing work experience across the UK and other European countries but mainly within the Republic of Ireland. His varied career roles have included the management of 3rd party certified chemical & microbiological food testing laboratories, Q.A. Manager for Avonmore Foods Meat Division and HACCP / Quality Manager for Waterford Regional Hospital.
Since 1994 Brendan has been operating as an independent food safety consultant having incorporated his own company Food Management Systems Ltd. He has carried Principal Food Safety Auditor certification while active during his career as a 3rd party food safety auditor and was listed on the International Register of Certified Auditors during this period. Brendan continually draws from his experience and working contacts across all food sectors to look for newer improvement opportunities. Allergen Hawkeye Ltd is one such innovative and exciting project.
William (Bill) Charteris was born in Limerick, raised in Wexford and Westmeath but Cork has been his home base since 1979. Originally graduating from University College Cork with a degree in Dairy & Food Science Bill has since worked within various fields of biotechnology innovation spanning 40 countries. He enjoys high mathematical and statistical capabilities and utilises this skillset to the maximum when researching new ideas. His passion has always been innovation, research and new product/process development.
He is a joint recipient of national and international product innovation awards and has a track record of helping entrepreneurs and young scientists to develop and hone their research and innovation skills. Bill's talent for thinking holistically and his attention to project fine details are equally valuable assets to Allergen Hawkeye Ltd and to the continuous improvement efforts being made by the Hawkeye team on behalf of our customers.

Martin started his working life as an Environmental Health Officer in the UK. He then spent 5 years in the Middle East working as a food safety specialist for a major airline. He continued his career in the UK with responsibility for food safety and health and safety management across the UK and Ireland for the world's second largest catering organization. He moved to Ireland where he worked as an independent consultant from 2000 to 2004 and then joined the national quality organization as Technical Director where he remained until 2016.
Martin is a trained lead assessor and has acted as an expert witness in a number of food safety related cases. He is an active member of the Food Safety Authority of Ireland Consultative Council and the Safefood Advisory Committee.
